Home-made oatmeal 'energy bars'

I made these oatmeal bars from Heidi Swanson's cookbook Super Natural Cooking, as a replacement for the store-bought bars I rely on, especially as a snack before a workout. They are pretty darn easy, and yield many bars. They are really more like a treat! I should probably do a side by side nutritional comparison with the RAW bars I typically get, and make sure that they don't actually land in the category of dessert. Anyway, for now, I'm thrilled to have these home-made snacks!

Big plans

Here are a couple of dishes I plan on making in the next couple of days:
Roasted portobello mushrooms over spicy mustard vinaigrette-dressed greens
Lemony roasted potatoes
Plantain and pinto stew
Marinated lentil salad
Kale and farro salad with toasted coconut and sesame oil
Steel cut Irish oatmeal sweetened with apple juice, topped with walnuts
A cocktail

Baked Oatmeal and Blueberries

This recipe is from the new-to-me cookbook author, Heidi Swanson, who focuses on incorporating whole grains and natural foods into her dishes. It was super easy to make, delicious -- even my co-workers enjoyed it, and they are not known for their whole foods intake. I had some dried cherries I wanted to use up, so I threw those in even though the recipe did not call for it. So far, I am guessing that her recipes are open for interpretation and inspiration or using up what you have on hand.
